1. Provides support in exceptional menu development innovation for residential, retail, catering and culinary support center that is nutritious, healthy, sustainable and financially viable. 2. Oversees menu and recipe compliance across the operations. Establishes systems and processes to ensure quality assurance and product acceptability in all Yale Hospitality locations. 3. Leads recipe testing and new product tastings, engaging the Yale Culinary team as appropriate. Oversees product testing, tasting panels, vendor communication, product performance and cost savings related to new products. 4. Manages the overall administration and quality assurance for the food management system that is used throughout Yale Hospitality but not limited to, ingredients, recipes, menus and menu costing, inventory, ordering and receiving. 5. Oversees and maintains the menu management software, including data entry into the system. Supervises menu management personnel in the accurate and timely posting of system information and processes. Partners with Director of Hospitality Technology Systems to monitor optimal system function, upgrades and enhancements. 6. Partners with Director of Supply Chain and Sustainability and Wellness Manager on accuracy of information in the areas of sustainability, traceability, nutritional data, food allergies and special diets. 7. Plays a key role in engaging with the operational aspects of central commissary and bakery, special events and emergency preparedness. 8. Determines ratios and volumes of menus across operations, analyzing waste logs and production sheets to help drive menu decisions and amounts. 9. Assesses culinary training and development needs for the Yale Culinary team. Develops and delivers coursework. 10. Leads process for evaluation and testing for culinary hiring and promotional opportunities.
